The great icing debate: Marzipan v Fondant

When it comes to the icing on your cake, we want to make sure you make the right decision. And whilst the default choice for most clients is fondant, another icing is emerging as a very popular decision; marzipan.

Marzipan is an almond-flavoured paste that can be used as icing and moulded into tasty decorations, whilst fondant is a popular sugar paste.

Here at Faye Cahill Cake Design we want to help you make the right decision, so here are some things to consider when making your decision:

Marzipan:

  • Marzipan has an exquisite flavour which isn't overpowering, but is rather very sweet.
  • Like fondant, marzipan can be dyed to create your dream design.
  • When used naturally, it provides a beautiful speckled finish.
  • Because of it’s workable clay-like consistency, marzipan is well suited for a variety of decorating techniques.
  • Unlike the common misconception, we use marzipan very thinly which allows the flavour to remain subtle.

Fondant:

  • A popular choice if any attending guests have a nut allergy.
  • Like marzipan, fondant can also be dyed to create your dream design.
  • Provides a smooth, flat finish. This means it also works well for transfer methods.
  • Because of it’s workable clay-like consistency, fondant is well suited for a variety of decorating techniques.
  • Fondant can quite easily dry out, so for those of you who want to save your cake to eat later—make sure your cake is stored properly.
  • In terms of flavour, many people prefer the nutty taste of marzipan to the candy-like flavour of fondant.

Hi! I’ve found a typo in your page here and thought I’d let you know. :). “ Because of it’s workable ...”. The “it’s” here is incorrect and should be “its” without the apostrophe. With the apostrophe, it is a contraction of either “it is” or “it has”. Without the apostrophe, it shows possession. :) Best wishes to you.

Hi, I need to prepare a birthday cake for Sunday and the request was very specific for a caramel cake, caramel filling and covered with marzipan. I have never worked with marzipan, so I have a few questions, 1- Can I cover and decorate the cake the night before , if yes how should I store it ? 2- Do I need to leave marzipan some time to dry before sticking my decorations (Unicorn, flowers and butterflies) Thank you :)
